Sunday dinner


I like to give the kids an occasional break from cooking – so I have decided to do Sunday dinner for everyone once a month. Last week, I was inspired by an Oprah magazine article I came across with pictures of a Jennifer Aniston party. It looked terribly healthy and that is a MUST for my family. I don’t know quite how, but Reid and I raised up a generation of health food addicts – and amazing cooks.  I remember asking Justin, when he was barely old enough to speak, “what’s your favorite food?” Response: “Broccy” (broccoli).

So this wonderfully healthy, Mexican inspired party spread looked perfect for my first post-mission try.

Here’s what I cooked:

Cavolo Nero and Red Cabbage Tostadas with Spicy Shrimp

Refreshing Salad of Oranges, Cotija Cheese, and Cara Cara Vinaigrette

Grilled Tomat0 Gazpacho

Mushroom Quesadillas on Whole Wheat Tortillas

  1. James is in the white, so that means Henry was the one throwing it onto the floor! Actually, my floor looks like that 3x a day! The food was amazing. My favorite was the orange/ avocado salad.

  2. Wow! I want to come eat at your house! I love the beautiful pictures that go along with your recipes. I have some home grown Mexican food recipes I’d love to share with you sometime. You seem like the type that would appreciate it.

    I don’t know how healthy they are, but they are good;)

    p.s. You need a blog that tells how you take such awesome pictures. I want to learn!
